Another option is join a local sailing club and work through their fleets. Here is So.Cal, I know of several clubs that start with C14's, Solings, ... and work up to 30'-40' Catalinas, Hunters..... The Red Cross course that I took in college started with Sabats, Lasers,... A small boat gives you an intuitive feel for how the boat, wind and waves interact.
