One tank is fine for your 27. They last a long time for just cooking. The world does not end if you run out, but you can monitor the weight pretty well anyway and get refilled before you run out. There are small ones available too; depends on how much you use it. Need to be designed for horizontal or vertical.

If you don't live aboard, a 10lb tank should last all summer. As a backup buy one of those blue 1lb tanks that tradesmen use but they do need an adapter

I paint the steel ones too, but I'm fighting a losing battle against rust. My steel tanks are just about done at 5 years old. Maybe the aluminium ones will work out cheaper in the long run.

You can get steel tanks galvanized before they're used. Last forever, pretty much.
