Advice for newbies

Hello! My husband and I are looking to join a boat sailing from Panama to Tahiti via Galapagos, Easter Island, PItcairn, Gambier and Australs. WE have Canadian passports. Wondering any advice to not having a long stay visa or flight booked out of French Polynesia upon arrival? Captain seems to think it will be fine. Also any advice on this route is much appreciated as originally we were looking at Panama-Marquesas-Tahiti.
Also what gear/things would you say are most valuable to bring onboard with you!

All non EU citizens require one of three things when they arrive in FP:
1) Post a bond for each non EU Passport of approx US$1,700 (yes this is required, even though you have had to prove funds when applying for the visa);
2) An airline ticket departing FP, or
3) A Bond Exemption Letter from a registered Yacht Agent in FP.
