Which pitch for Maxprops on cat PRIVILEGE 435 ?

I have dissassembled my max props to change seals on YANMAR SD31 saildrives and lost the pitch information.
Can any one advise me on which pitch to select: 16°, 18°, .....24° ???
My PRIVILEGE 435, total tonnage about 12 metric tons, waterline 43 feet, is fitted with 2 YANMAR 3JH3E , 39 HP at 3000 rev/minutes.
Radius of PAXPROPS 220 mm.
Old models fitted in 1999: So no way to adjust pitch underwater. I want to avoid multiple haul outs and trial & errors

Before I disasssembled the props
Max speed 9 knots
Used to cruise on windless ,flat water at 5 knots on a single engine at 2000
revs.

Any advices from PRIVILEGE 435 cats or similar catamarans welcome !

They refurbished mine last year that I bought new in 2003 for a Hunter 356. Jerome is very knowledgeable and helpful. They are on PDT.
