Looking EU info

Does anybody know for sure whats happening with the 90 day EU entry? We want to head to the Med for a couple of years but as Canadians we can only stay 90 days and then we are being told we must leave for 90 days. We know there are foreign boats with foreign crew that are able to somehow stay an entire charter season of 4-6 months but cannot figure out how they are doing it.
