Inverters have a habit of going nuts when trying to power devices with large reactive loads like aircon, winches and windlesses. All the big cats I have seen have two shore power cables and employ two A/C current load groups which power divide the aircon units, the electric side of hot water heaters and other A/C devices between them. In a standard marina set up usually only one A/C load group can be powered at a time. Of course, one group could be shore powered and one genset powered simultaneously.

All is not lost...consider DC A/C units. Termodynamica and Mabru are both very efficient.

I ran my 16 KBTU per hour air conditioning on alternator with a large battery bank for five years. If I pre-called the boat the air condition would run all night and sustained a temperature without running out of the generator which I did not have or either engine.

I think you confused the amp draw. .
Absent an indication of duration, the amps drawn is meaningless, e.g., 12 amps per hour vs. 12 amps per year. Consequently, it's important to denote draw rate
