New Electrical Installation for Old Boat

I just bought a Bristol 27. The current electrical system needs to be replaced.
The boat is in Ontario, Canada.

I have a quote for about $3,500 before tax (ouch).

Are these items 'reasonable' and required?

2 x 310W Longi-310M panels (60 cell, mono) $250 ea
Victron SmartSolar MPPT 100/50 $425
Victron PureSine 12v MultiPlus Compact 2000W 12/2000/80-50 $1495
2 x AGM Stark SRK-533AGM 12v 424Ah @ 20h $595 ea
Wires, Fuses, Junction boxes, Programming $445

The panels seem reasonable.
I should have enough space to mount one on each side of the pushpit, above the outboard hatch.

The Victron MPPT and Inverter/Charger are almost $2000.
There are probably other brands. Are they as good and cheaper?

AGM Stark SRK-533AGM 12v 424Ah @ 20h $595 ea
LiFePO batteries are not in my budget.
Can I replace the AGM batteries with FLA?

They are offering a special if I order soon (and beat the springtime rush).

The boat is small and my electrical requirements are also small:

Running lights, cabin lights (LED), Anchor light, Bilge pumps, VHF,
Inverter for computer,
Chart plotter/OpenCPN (Raspberry Pi4) & screen, Outboard 9.9hp starter
MacBook computer

Small portable fridge? eg. Dometic CFX-28 0.75 Ah/h , Alpicool C-15
1500W Induction cooking plate (I can dream...)

What am I missing?

Apart from the induction cooking you don't need much electricity (right?) and a much smaller inverter would suffice. I'd heavily rethink your "electric pantry" (I'm not sure how well the 424 AGM battery handles a draw of 100+ amps??). I suppose with a 27 foot boat you'd need LFP batteries to have a reasonably good experience with induction cooking.

You seem to have a different idea of what is "reasonable" than I do ... there is no way those panels (168cm x 99cm) would fit on my 27ft boat if I ever wanted to sail it again.

You are correct ;-)
I was a bit optimistic about the area available.

I've lowered my expectations.
The smaller 170W panels are 'only' 26" x 58". I am pretty sure they will fit on the pushpit and will be moveable if necessary.

I've also decided on FLA batteries as they are much cheaper and I have a limited budget for this new/old boat.

Smaller panels, smaller MPPT, smaller Charger/Inverter.
Under $2000 CDN including taxes.
