While the Iridium Go! does have a GPS, the position date in the app comes from the Go via a custom API. It is not, to my knowledge, standard NMEA data being sent over WiFi which is what OpenCPN needs. The Iridium Go! is not intended to be a GPS source for onboard instruments anyway.
To feed your OpenCPN with position data, you need some NMEA based source of GPS data. This could be a USB GPS puck, or a NMEA to WiFi converter attached to your boats existing NMEA network, or a Vesper AIS with WiFi, or a number of other possibilities.
