The Bullet is intended to be mounted on and supported by the antenna. If you choose to place the Bullet remote from the antenna you will have to use coax between the 2. A 10 foot piece of coax will reduce your received and transmitted signal by 15 to 40% depending on the grade of coax you use.

If you are willing to accept the losses caused by coax then you can place the Bullet anywhere.

Our bullet has been working great for two years. However, just about two weeks ago, we need to turn off our wind generator when using it or our internet will stop when the wind picks up and starts turning the wind gen (basically the bullet freezes and we can't connect to it unless we turn it off and on).

Any ideas or is it just time for a new one?

A new wind generator might produce less RF but I can't see how a new bullet will solve your problem.

The most common thing that I've seen that causes a Bullet to "freeze" is a power fluctuation equivalent to a brown out. Something causes the power to drop to single digits, the bullet tries to reboot but freezes during the reboot.

It seems to me that Bullets with the latest firmware on them are not susceptible to this so I would recommend updating the firmware to v4.0.1 for a Bullet 2HP. You can download the firmware from the Ubiquiti website.
