Cable routing for MFD installation

We are mounting an Axiom 9 MFD on a swivel mount on top of a little teak table we're putting on top of the steering pedestal. It's a older Cape Dory Intrepid 9M whose compass had been removed from the binnacle (we plan to install a bulkhead or flush mount backup).

We're exploring various options for routing the cable below decks:

One is to just ziptie them down the 1" SS tube handgrip, then through a gland in the cockpit floor. A little inelegant.

Two is to get a field installable NMEA 2000 plug and run the cable inside the handgrip tube, but wonder if the tube will fit over a gland and if it will be a durable seal. A very clean but difficult to service installation.

Three is to run the cables inside the pedestal. Easy, but we worry that it will be hard to keep the cable in place and may chafe against the steering chain.

Curious as to how most folks have approached this.
