Airmar St800 log wheel and temp wiring

I have 5 wires coming from the sensor log wheel (speed) sensor it does temperature too. Red/green/white/brown/bare

The user manual says it's nmea 0183, (I'm not convinced) and I'd like to connect it to my hybrid touch mfd nmea input.

Where can I find which wires are what? Or is that not how these sensors work.

Solved: there are digital (nmea) versions of this sensor, but mine is analogue and needs an appropriate display/speed transducer pod/itc5 to get a digital signal that my system can use.
