Non VAT Paid Boat - The rules!

I have bought a brand new Lagoon 50, built in France however, I will take delivery of the boat in the UK as I am having further fitments done there. I am a UK passport holder but am resident in Spain. I plan to export the boat from UK to Turkey where I have a 12 month berthing contract. The boat will be non-VAT paid. I was planning to flag the boat in Jersey but am open to suggestions. Can I sail the boat to Turkey myself (as it is in transit) or am I not allowed on the boat in the EU as I haven't paid the Spanish VAT on the boat? I had planned to take 3 months to sail from UK to Turkey.

Any advice or the direction of a qualified advisor would be appreciated.
