I don't know how interested the OP is, but more input from people using fishfinders for bottom scouting might well be appreciated. There are a number out there. He can't get a Probe, they're no longer made, so, imho, more input would be more help to him.

You want either a downscan or sidescan Sonar.
May be more of a marketing term than an actual sidescan, but either way you want what is called a CHIRP Sonar which I think is a transducer that transmits a broad range of frequencies as opposed to one set freq., the picture you get is pretty photorealistic if your in very smooth water, you really can see a shipwreck, tree or whatever is down there like it was a photo.
However boat movement will blur the image of course, the Sonar doesn't know the boat is bobbing up and down.
The Raymarine Dragonfly I had was excellent, and surprisingly inexpensive

Here you go, a 7" chart plotter with downscan CHIRP Sonar, for under $400.
That is an excellent price and I doubt it will last

The greyscale fish finder I mostly use is a Northstar 443s and it has provided excellent service for bottom condition evaluation for many years. It was the cheapest available at the time I bought it and has a navigation mode which displays large numerals easily seen from the cockpit down the companionway. Unfortunately I think this model has now gone out of production.


The previous one I used was a Hummingbird greyscale and it also gave excellent service. I think that just about any fish finder is going to give better service than just a depth indicator. One of the features I really like about them is you can see whether the depth is shoaling or increasing at a glance from the trending of the bottom indication.
