Chris Craft Constelaltion

I have a 55' Chris Craft Constellation here in Perth Western Australia, which sunk a couple of years ago and after bad advice from the insurance assessor - I didn't get motors to turn. Lost insurance fight and now have two dud Detroit 8v71 motors.
HAve sourced two good ones and am now to replace. I know you chop the top off the roof over the saloon, but am not sure which way will do the least amount of damage and so be able to easily be refitted.
Is there anyone out there who has done motor replacement or knows how this should be done correctly?
I would appreciate any advice or guidance.
