Don't get a digital dehumidifier. If the power goes out, it may not come back on. I have a $150 from Walmart with a twist analog control. It works great. It will dry the bilge if my sole is open.
We have a digital for our house and if the power goes out, it needs to be turned on.
Also, get one with the drain on the back for a hose. We put our on the galley counter and drain into the sink.

I disagree with the "no Digital" comment-
These are digital.
I have one of these on each boat:

Have you tried unplugging it and plugging it back in after an hour or day? Many electronics will hold data for a few minutes but not much longer. I have one in our house, it won't start back up. Some may have storage cells that will store the data longer. Yours may be better than mine. I purchased an analog and digital from Wal Mart. Both around $150. The analog is on the boat. No problems with analog. At least this debate gives the OP information for shopping. That is the reason for this forum. Thanks for offering alternatives.

I've used them for years in very humid climates..Guatemalan jungle.
Make sure you have something that can remove at least 30 liters per day with auto reset and you'll be good to go. I set mine at 55 or 60% and it will cycle as required. Uses only a fraction of the electricity that an air conditioner uses but it will warm the boat. Can't say it will remove mold but it certainly won't let it grow if the boat was cleaned to begin with. A good wipe down with vinegar works a treat.

I bought the GE model that does 35 pints a day. It's bigger than I originally wanted but they dropped the price to match the 22 pint model. Since the bigger one was now $50 cheaper I grabbed. At 35 pints per day I was hoping to dry out my boat at a much faster rate.
So far so good. I placed in on my galley counter and ran its hose into the sink. It's been running now for four days and the boat already feels much drier. I bought a pin--less moisture meter and will start checking and recording the moisture levels on the main deck.

My plan is to run the dehumidifier continuously as long as I'm in port and not aboard and storing it in my dockbox when sailing overnight. I'm hoping to find the rest of the leaks, if any, and plug them up this summer!

My GE dehumidifier is working great so far. The interior is much drier now and when I open the hatch on a sunny day it no longer feels like a steam sauna inside.
I've been taking moisture readings on my deck and cabin top and most are 10-20% lower than they were before.

While I'm away from the boat, I use a cheapo window-style aircon unit that fits in a frame in the companionway, and a $50 electric dehumidifier. These keep the boat dry, and odor-free.
Note: I use the aircon so I don't need to run the boat aircon with the through-hull open. Also, I'd rather wear out a $150 home depot aircon than the boat's $1500 unit!

Our harbor requests that owners do NOT run air conditioners when we are not on the boat. Most people only come to their boats once or twice a week at most. I've seen some boats that don't see any activity for several weeks at a time.

You will be more than pleased as your boat dries out. Seems like everything smells and works better. One of the best thing I have done to my boat.

BigJim: that's unfortunate about the "no aircons" rule: an a/c is a great dehumidifier.
I'd recommend the $50 electric dehumidifier, then -it doesn't use much power.
It's a good idea to add a drain tube to the unit's reservoir, so the water it captures can drain into the sink.
One other thing: plenty of ventilation. I replaced my old, busted solar fans and that helped a lot.
