I needeed a good digital fridge thermostat.
Does anyone have any experience with these thermostats? Or can point me in the direction of a reasonably priced option.
I am wanting to have better control of my fridge and freezer in order to minimise the power draw.
Here's what I've been looking at.

I have two, one for the fridge and one for the freezer. They are great units, dramatically reduced energy consumption and so far had no issues with them in 2 years. Bear in mind that they come as a stand alone unit, so I got a project box on ebay to fit them into.

I have one of those. It has been working just fine now for also 2 years. All mine does is turn on the spillover fan, but of course it doesn't really care what the contact does.

Try eBay or mpja.com. For more uniform cooling I added a computer fan which runs all the time with very little current draw.

I've got two as well- one for freezer compressor and one for spill over fan control. Three plus years of use with zero issues.

I have 2- one in fridge and one in freezer 4 years I love them.
Yes to the computer fans also. Mine are mounted to 2" PVC pipes with an elbow at the top to draw from the bottom and blow across the top. They run 24/7 and use miniscule energy. Very even temp in poorly insulated boxes

Using one of these just for simplicity (didn't know what space was free in the freezer I have coverted to a top loading fridge)
But have used the same ones linked before with success
Interesting comments about fans, guessing you are using them internally?

I looked at several of these and most I saw required AC electricity, which I was not prepared to supply. So I stayed with the standard Dometic thermostat which seems to work pretty good, although it does not have a cool digital display.

Many say that, but don’t. How common is 12VAC?

I installed the ITC - Digital Display Intelligent Energy Control from Isotherm/Dometic on our Isotherm Cruise Elegance 130. It was a bit over $100, and provides a digital external display of the thermostat temp, but also has some other functions. Previously not knowing the internal temp was a PITA, and opening the door to read the thermometer we had in there was defeating as it dumped cold air each time.

They are made for 12v also. Love mine.

They come in several versions, 12V or 24V DC, 120 or 220 AC, one or two relays, C or F display. I have a two channel 120 AC unit running my beer fermenter. Had it probably give years, no problems. I have two on the boat, both one channel 12V DC. One runs the fridge and the other is hooked up to the engine and a buzzer for a high temp alarm which my engine didn't have. That one has saved my bacon a couple of times. Those also have worked flawlessly. For about $12 on eBay you can't beat them.
