Windlass Muir VCR 1600 repair

Our Windlass has been tripping the breaker on the last 5m of retrieval and has also developed an oil leak.
So we have decided to strip it down and replace the bearings and seals. When I looked online I couldn't find anything to help me with this repair. So I thought I would post a few pictures of what I have done so far.
I also have a couple of questions for anyone that might know.
What is the correct type of oil that I should be using?
What is the correct quantity of oil that I should be using?
Does anybody know the correct way to remove the electrical motor so that I can access the last two bearings?
