guessing its a thin smear of grease rather than a big goop

A thin film is all that is needed.
Of course you could put a big goop on, but the pressure of the cones would quickly squeeze out most of it. If you have a choice, this is actually a place where "high pressure" grease makes sense. That basically means that it is resistant to ALL getting squeezed out when it is put under pressure.
One of the most common damages you see to a
windlass is to the shafts and keys. Unlubricated clutches can lock up. They key can't take all that force if the
anchor is still stuck on the bottom and a wave lifts the bow. SOMETHING has to give... If not the clutch, it will be something that costs
money to repair.
