I think the second point that was lost in this was the fact that the OP stated that he wanted to consider the outboard not just for the dink but to power the mother ship as well.

I see, I guess I missed that. How about two 2 hp motors, pull one for the dink when needed, spin the mother ship on a dime with one in forward one in reverse? LOL!!

Regarding thread drift I'm of the opinion that some of the most interesting threads are the result of it. In this case drifting into whether a Walker Bay is worth buying & then what's the best dinghy was to be expected.
To get back on topic we use a Honda 2hp on our Bauer 10 & normally run it at just above idle speed, at half throttle we're digging a hole & wide open is pointless.
Boat: None,build the one shown of glass, had many from 6' to 48'.
