A simple toggle switch could easily turn the power off to the winch or winches provided it had the current capacity.

A push button switch would have to be wired to a latching relay to accomplish the same thing and you would need another switch to reset the relay.

The KISS principle tells us to use a toggle switch.

We have used a simple switch in series with the footswitch for years but are now replacing that with remote power switches. These are available in 12V and 24V and come with the remote switch. You can add a big red panic button if you like. The actual switch sits in the high power circuit and the wiring to the safety switch is just signal wire.
