Sizing a refrigerator evaporator and compressor

I am looking at replacing my older Alder Barbour that runs on R12 refrigerant. My box size is 6.77 cubic feet and has been used as a refrigerator and inside the oval shaped evaporator a freezer. I would like to go with a similar setup. I spoke with a refrigeration tech and he recommended a system using the BD50 compressor and the VD152 evaporator and sticking with an air cooled system. Looking at the specs of the VD152, the max fridge size is 15cubic feet. The smaller VD150 looks like it can support up to 9 cubic feet.

A few questions:

Is it worth it to oversize the evaporator to cut down on run times?

Are the manufacturers volume estimates for their products optimistic?
