Replacing water tanks Morgan 44

We have a 1991 Morgan 44 Center cockpit. Three water tanks and two of them leak. We want to replace all three. My question is about access. Under the setee and the v-birth they’re covered up by plywood and then vinyl glued over the top. Anybody with a similar situation have a good advice on how to access these water tanks? I was not a DIY person before getting a boat a couple of years ago. So we are learning as we go but this one has me worried because I don’t wanna do any damage.

I realize your post is three years old, but wondered how the water tank replacement went? Were all three tanks stainless? And where is the location of the third tank?

No problem with timing. We had three tanks. We replaced one with a watermaker. It was too much work to replace the other 2. We flushed and treated them and it’s been good so far. We
