Sorry, I thought you meant no insulation. Two sheets of metal (pref stainless) with insulation, same as the rest of the oven. Look good too

If there's no insulation it will get very hot, I agree you can probably train yourself to avoid the hot bits with your fleshy bits, but don't discount how much heat that will then generate into your galley... not sure where you are, maybe that heat would be a good thing? But even then losing some efficiency by generating all the heat that doesn't go into baking.

In similar circumstances we fitted a piece of 6mm supalux rigid fireboard; it worked perfectly, perhaps better oven-heat and a cooler cabin than with the glass

6mm vilaboard would be an Australian equivalent.
