I would like to replace the old AB mechanical thermostat with something like an STC1000 digital thermostat but my knowledge of electricalwiring would fit on the head of a pin. Attached is a picture of the wires running into the AB thermostat. Can I use these to hook up the STC 1000 or do I have to run new or additional wires? Thanks.
I see an STC-1000 on Amazon with a pic of the wiring diagram. In the diagram, there are terminals for the sensor, a heater, and an air conditioner, 2 each, 6 terminals total. Whether you have enough wires depends on what the thermostat would be controlling and where the sensor input comes from.
It's controlling a 2003 vintage Adler Barbour top loading freezer (there is a similar, one controlling the spillover fridge next to it) on a Hunter 356.

Sorry but I don't understand. I see yellow, green, black and gray wires. Yellow and green may be connected, or just stem from the gray. Is one pos and one neg? Is the black the load that triggers the compressor? I know I sound like an idiot, but if someone can identify th parts for me I am probably capable to hook them up.

there are diagrams online, if you can not follow those there is no way a poster on CF is going to be able to help you

Then metal tube runs to a bulb that is where the thermostat is sensing the temperature. The digital thermostat should have a thermistor that will need to be mounted where the bulb is. The existing wires are just a mechanical switch and would go to the output relay on the digital control. It should not mater which way they are connected as long as they are normally open (off). You will need to run another pair of wires to power the thermostat.
