Convert Fresh Water Tank to Holding Tank - Stainless

I wonder if it is problematic to convert a stainless water tank">fresh water tank to a holding tank.
We have 2x200 liter fresh water tanks. However after installation of a water maker which will have enough solar power to produce about 50 liters per day I think the second 200 liter tank is not really needed anymore. However a big holding tank would be convenient.
Emergency fresh water capacity can be stored in canisters (which are even good to take into a liferaft)
Any recommendations?

If you do a search here, I think you'll find Peggie Hall's comments (and probably others') about how unsuitable metals are for holding tanks.

If your plan is to pull it out and have proper bungs welded in it could work. It needs needs a top to bottom standpipe for pumpout, a 1" vent, and the stock fill might be ok for the waste in. Stainless is not a good long term holding tank material, better off with a new poly tank.

I wouldn't use a metal tank for a holding tank. Black water is pretty acid. Aluminum is the worst but stainless isn't much better. Poly tanks work well and are pretty cheap.
These guys make about five hundred different sizes and shapes of tanks.
Ronco Plastics - Marine Water Tanks, RV Water Tank, Auto Detail Tanks, Water Tanks
Could you use some extra fuel capacity? Stainless works pretty well for that.
