I think the difference (at least on ours) is only that the dehumidify setting automatically cycles the AC on for a while, and then back off, occasionally through the day. Contrasted with "always on."

I forget whether there's an adjustment for "how often" or "how long" each period... since I don't have to know that again until approx. July.
