Transom/Sugar Scoop Protection - Need product suggestions

Ahoy Mates!

As you can see in the photo, I have a sugar scoop type of transom. The trailing edge of the transom is always getting beat up and it's now time to fix it again and come up with a solution to make that trailing edge "bullet proof". Under the paint is fiberglass, so I'm going to refinish the trailing edge and then look for a product that will protect the edge.

A rubber channel product seems at first to be a good idea, but...the trailing edge on the port and starboard side meet at the bottom of the transom where it is significantly thicker. So, that means that I can't use a uniform rubber channel with a 1" mouth.

Ideally, I'm looking for a product that can be adhered to the edge, hardens, can be sanded and painted. Here is an example of a product line that caught my eye today.

Looking for solutions and ideas ideas. Thanks! ~Matt
