Communications from Central America/Western Carribean

Hi,
I am preparing to cruise across the Gulf from West coast of Florida to The Yucatán, Mexico area.
I would greatly appreciate any and all advice on the following topics:
1. Sat phone or other communication device to text, talk send/receive emails while underway and while I cruise the Central American area;
2. Extra fuel container. I now have twin 300 hp gas engines each has a 200 gal built in fuel tank. I would like to double that capacity. I am considering an external fuel badder placed on the bow of my 31' sedan Bridge cruiser.
3. What safety equipment in addition to my life jackets do I need?
4. What is the best route?
