I wonder if the exhaust was "sheeting" down the hull and then just looked like it was coming out of the cutlass...?
Regarding the amount of exhaust water... the OP mentioned replacing the impellor... is it possible some old impellor material is blocking part of the passage?

So if I'm understand correctly, if the shaft/bearing is water cooled the fool proof way to tell is there would be a water line plumbed to it.

As for the exhaust water running down to the hull and making its way to the shaft. I'm confident this is not the case the amount of water coming from the shaft was constant and substantial

I had an older Catalina with that motor, there wasn't as muck water coming out of the exhaust on that one as some others I've had but this doesn't sound right.
The motor only lets water out when the thermostat opens but on mine there was a bypass to let the excess water flow into the cooling elbow of the exhaust which is needed to keep the exhaust components cool enough. If the po routed this to a dripless seal cooling hose it wouldn't be the best way to approach this.
Creating one problem while solving another.Best to take pictures of the parts in question and trace the cooling system hoses.
I did know the setup pretty well on that one since I replaced the packing gland and rebuilt the motor and exhaust system while at it. One nice thing about that motor, once the manifolds and transmission are separated from it two reasonably healthy guys can lift the motor out by hand.

Thanks so much for your time. I'm going to look as soon as I can make it back to the boat. I don't want to speak too soon, but regrettably I don't believe I have that type of set up .

possible the water intake thru hull is not far from the cutlass ...? Maybe AF was running down to the cutlass from there and looked like coming from the shaft? Unless you have the cooled stuffing box..there is just no way it was coming out of the cutlass.....

For the water flow question, take a peek inside the exchanger for pencil zinc's that break off inside and block the exit.

The one I had was raw water cooled as well as most of the ones I've seen.

If it's raw water cooled you have no heat exchanger....

First temperature indication is not always correct for an engine running without proper flow. The indicator is normally a RTD which reads differences in temperature in a thin shielded well, without water flow the temperature difference is the air flow. Air doesn't conduct temperature as well as water. You can see this effect in your car if you overheat it, temperature will go high then low as the water is drained out.

Second the stuffing box must have cooling water plumbed through it for cooling which is ok because it prevents debri from entering due to the pressure difference between the pumped fluid and the outside seawater.
I would ensure the antifreeze is cleared from the system prior to splashing the boat again, we don't need antifreeze in the water.

There is not any antifreeze as it is a raw water cooled engine.

No separate plumbing to the stuffing box in a Catalina 30.
