3KW pure sine wave inverter +500w Pure sine wave inverter as backup.

600L water tankage in 2 tanks with 2 pumps both switchable, either pump can run either tank. 80L holding tanks.
270L fuel tank giving useful range of 300NM (hard running) to 1000NM (taking your time) average of 500NM to a tank
Katadyne power survivor 40e watermaker, will run just fine from the solar.
40L hot water tank, heated either by engine or 240v
