Bow Platform Maintenance

Time for maintenance on my bow platform. I've not done this before. It appears that there are 3 bolts that hold the platform to the spit, so I can take it off the boat to make this easier.

I'll need to strip off the existing varnish. Any suggestions for stripping all those square holes?

There is a large gap in the area of the rollers where it appears 2 of the boards have separated. How would you fix this? Try to re-glue and clamp, or fill?

I would probably just fill that gap with epoxy + a strengthener/filler .... or maybe just a 5200 type of product if you are revarnishing. The wood dries/warps, and holding it flat after that is an effort in futility and likely gains you nothing anyway. If it readily closes up, then Resorcinol or epoxy glue. But I doubt that.
Stripping in those square holes will be a pain. Just strip what is loose maybe. I'd probably try paint stripper and a bottle brush.
BTW, white paint lasts far better than varnish, so even if you keep the platform varnished it might be worth painting the 'sprit etc.

For me, I would make repair or replacement where gaps exist. Fasten and glue with good thickened epoxy (West 610). Before doing anything I’d remove the platform and use a chemical pAint remover or bring to a furniture stripper.
As far as a finish... why not let the platform weather grey. Provides great traction / nonskid and contrasts well with a varnished bow sprit. Inspect the sprit well and seal it up with paint or varnish.
