I would guess that your provisioning would depend on how well you can cook(can you make thousand island dressing from scratch?), and what youre willing to tolerate as food.

first thing I would do to get started is track what you eat now. I have a regular grocery list in excel that Ive used for about 20 years. Ive found that the list reflects your eating habits and the after a while of using your list youll end up seeing how boring and predictable your typical shopping trips really are. From there determine what you can do with out ( frozen perishables mostly) and what pre-prepared foods you can make on your own and what you can get fresh or catch. Start with condiments and sauce/gravy mixes and move from there. Theyll be the backbone of what you do from there.

Look at survival sites, they have a lot of info on preserving and loading out for extended periods of time.
