The solenoid has already shut of the fuel. Don't think a rat could chew through a solenoid.

Thats what the solenoid does, it shuts off the propane and if a solenoid fails, it fails in the closed position. Still it does not hurt to manually shut the tank off if it makes you feel better.

Transport Canada Construction Standards For Small Vessels (TP1332) don't even mention propane, so there are no rules for LPG on pleasure craft.

Ten of the ABYC Standards are included (not propane)...

Assuminug the "Canuck" is in Canada, there are no laws regarding propane in boats (pleaseure craft)in Canada

Your Coleman stove does not have flame failure shut-offs it is not suitable for a boat and does not meet ABYC Standards.

Take a look at Safe Boat Propane Installations...
