Epoxy is the highest performing resin no doubt and it is necessary for any boats made of wood.
But for composite construction vinyl ester is more than adequate unless your operating at racing...

Fibreglass is indestructible when it’s designed to be, if the design fails so does the fibreglass.

I’ve used vinylester for pools and spas and also yachts, in both cases the shop had a schedule of bubbling dry air through the resin to keep it mixed and in solution vastly prolonging the shelf life....

I agree with the poster who suggested getting a quote on 100% vinylester.

Fasteners.

I would be tempted to use composite fasteners, they don’t corrode, they don’t destroy planer blades and their expansion coefficient doesn’t move around and push the screw heads out...
