Go with the shoal draft. Too many rocks to hit. I believe some channels are only guaranteed to be min of 6 ft. I have been in 7 to 8 ft deep channels in Georgian bay.

Just don't loose the small spring and clips inside the engine and get new copper washers for the banjo fuel fitting. The repair shop will have the washers.

Yes I removed the pump myself. Keep and reuse the copper shim under the pump. It is your timing adjustment. Timing should be the same after installation as before.
