New poster,new boat, new systems

Hi, new poster and long time cruiser for months at a time but we are about to jump into the liveaboard pool.

We sold the sail boat due to her smallish size and have had our offer accepted on a trawler with all the bells and whistles apart fro a/c which we dont see as a requirement and apparently it does have all the requirements onboard to run the large 240v 2 door fridge freezer with icemaker, kettle, toester, microwave, TV via an 8KVA diesel Genset to a Victron Phoenix charger to a bank of 6 x 200ah AGM batteries and then a 3500W inverter .

It does have another smaller 240v bar fridge and same size freezer as well, but I am not sure if these can be run at the same time. I am thinking as the food supplies run down, the big fridge would be shut down and the smaller fridge freezer may come into play, though they may well use as much or more than the big fridge.

It has additional niceties like 240v washer and dryer but I would have to assume they would only be run while the genset is running.

All lights, toilets, pumps are 12volt or 24volt (The huge anchor windlass is 24volt as are the 200gph bilge pumps)

My question is, given as I have a huge expanse of unused flat roof space and i'd love to cut back considerably on genset use I am wanting to add some solar.
I can currently get a deal 10 x 250 watt panels which would probably be a good start but what else would I need in addition to that?

I know the answers have most likely already been answered, but an hour or so of googling hasnt given me an obvious solution as it mostly seems to be grid tied solutions or smaller 12 v systems I am finding.

add: I am reading this thread now http://www.cruisersforum.com/forums/...or-168214.html

As the boat comes out of the water soon for survey, I would like to gett solar sorted at the same time, so time is relatively short for extensive research so any help would be appreciated
Thanks
