Hi windhorze. Sorry, I just saw this.
I've done several pieces of epoxy over white oak. All have worked well, but none have been proven by actual experience with sailing in the elements as yet. However, how I've done what I've done is to prep the wood with fine Scotchbrite or sandpaper, then clean well with same and denatured alcohol. Any time I'm going to coat, glue, paint, or epoxy, I wash all applicable surfaces down with denatured alcohol, right before I apply whatever. Good clean surface this way, including woods with their own oils like white oak. After epoxy coats, I've used outdoor polyurethane with good results. Again, untested for years of sailing exposure. So, I'm unsure that I can really answer your question as to durability. But apllication-wise, it's not bad.
