We find on our boat that cooking (almost) any meal is easy the hard part is deciding what do we want to eat, so we made a list of all the dishes we know and like broken down to breakfast lunch and dinner. And when my SO or I ask the question "what are we going to eat" and we draw blank the list is taken out and red through. There is always something that we find interesting that we have not tried for a while (like French toast).
