I started a whole-foods plant-based diet 7 months ago... No fried foods, minimal refined sugars or processed foods, no meat, eggs, dairy, avoiding even plant-based saturated fats and trans-fats. We have been exploring new foods and enjoying eating just as much, if not more, than before.
I'm 60 years old, on no meds (and trying to avoid them). Some data points for consideration for those who doubt:
