This is all fun and good but no one has told me how to make and use coconut thread. I'm sure it would make my shirts smell good- and natural & easily available too.:devil

havent found that thread yet--mebbe because my coconut was overripe-- the other one was green.. mebbe next one has thread.....

Mebbe- but I add rum and the lime to the coconut and drink it all up ... Then forget what I was looking for in the first place!! Maybe I need to look before the rum... Yeah, right!

How to make coconut cream.

Take 1 coconut, remove coconut from the shell and grate (or 2.5 ounces fresh grated coconut), reserve the coconut milk/water.
Add coconut milk/water to enough cream or milk to measure 1 quart

In a heavy saucepan, cover the grated coconut with the coconut milk/water and cream. Bring slowly to a boil, stirring often. Cover with a lid and let cool to room temperature.

Place a sieve or strainer over a large bowl. Line it with a double layer of cheesecloth. Pour the soaked coconut with its liquid into the lined strainer. Lift the cheesecloth, pull the edges together, and squeeze out the coconut cream.

The mash may be dried and/or toasted for other uses.

Refrigerate the coconut cream and use within 5 days.

Ahh, that'll be why the coffee I had with canned coconut milk was naaaasty! Guess I'll have to trawl the supermarkets and find some whole, proper coconuts and go from there!

Although, whether I'll be able to get beyond the rum and lime thing I'm not sure.... (my boat "came" with half a bottle of extra strong rum)

i only use canned for cooking

I bought a green coconut, drank the juice but when I tried to dry the flesh it never dried. It just got smelly from the hair on the coconut! Any ideas?

instead of trying to dry it--which i never seem to have a problem with--dunno why!-- try cooking with it or placing into a fruit salad/desert item..... cook frsh tuna with coconut, mango, onion and garlic...yummmmmmmmmmmmmm--would work with pork or chicken also. herbs to taste--i didnt use salt or pepper--just a lil serrano chile sliced and diced--- omit the white part and seeds....poblano chile would also work, for the flavor......


did i say GARLIC??!!!!



mebbe mine dry out because i want them moist..

Yes. Don't do that!

A mature coconut isn't a dried green coconut. Personally I like the flesh of a green coconut better then that of a mature nut and would have eaten it.

The green coconut is immature. The "flesh" is jelly-like and hasn't become firm, and won't after you open the nut. Green coconuts harvested from the tree provide the best "coconut water". You won't find a more thirst-quenching drink. Vendors sell them with the top cut off so you can drink the water. Then if you ask, they'll split the nut, whack a scallop off the outside of the shell and hand it to you to use as a scoop to dig out the jelly.

Brown coconuts that you can pick up off the ground have the firm white meat. They also have "water" but if you drink more than a little of it at this stage, it acts as a laxative.

Why dry it? Why not eat it raw? It is delicious! The jelly part is MAX YUMMIE!

You can always buy the dried thing somewhere. I think it is called copra.

There are many stages to the green stage and while the juice (a.k.a. milk) is good at all times the jelly thing converts into the hard matter that later can be dried. Maybe it takes more sun to dry yours though but it looks that easy in Polynesia.

When the nut falls on the ground and creates a sprout (the right word?) then you can eat the sponge interior part too. It is very good but not everybody knows. Make sure you learn the trick from a local as later the sponge gets some hallucinogenic properties. Unless, off course, that's what you are after.

And mine stayed moist because I wanted it dry. Go figure! Next time I will try it in a sauce instead. Shrimp with coconut sauce. Yum.
