The Coconut Thread

I just love coconuts. Here is a method where I get multiple different eats from one method of preparation. Take coconut meat, dried or fresh,then add 3 parts water to 1 part coconut and blend to a puree. Then heat on stove till steaming. Immediately strain through a fine screen strainer mashing the pulp to a fluffy dry. I put the "milk" or liquid part into the fridge till cold. then pour off the top, the bottom will be solidified. Dry the fluffy part to make coconut flour, used for thickening or baking. the liquid milk that is poured off makes killer smoothie or great alone, on cereal etc....the fat left in the bottom makes a great creamy ice cream by adding some honey, vanilla and or fruit. It can be salted and used like butter or clarified by heating and straining and used for cooking. Tell us your coconut recipe!!!!!!!

Great post

I spent a month living on lighthouse key in Belize 25 years ago. The light house keepers wife baked coconut bread for us each day after we gave her 400lbs of flour. It was supposed to be 200lbs but we picked up 2 bags instead of just one from the Quartermaster, oh well, she valued the flour more than the Quartermaster.

She could bake anything in her 45 gallon oil drum sat on its side with a small drift wood fire underneath.

Green coconuts are so good and siad to be really good for you. Once the meat gets hard supposedly the oils are very high in cholesteral but when the meat is like jelly it's high in vitamins and so forth. The green ones are easier to open too!

This is a wonderful thread! I love coconuts. Does anybody have an easy method to open a coconut and then get the meat out? Don't tell me to hold the nut in one hand and a machete in the other. I like my fingers.

You can do like the monkeys and use a sharp rock. But if you want the juice the top has to be cut fairly clean. There's always a bandsaw.

With the green ones it's easy since they are relatively soft. There's actually a spot in the top where a knife will enter quite easily and you can create a hole and drain the milk then carefully chop open the top (or split the nut).

A dried one is easiest to drain if you drill a hole in a couple of eyes. Then you can "tap and spin" the nut. Hold it with the eyes facing away from you and with a heavy object tap it on one of the seams, right around the middle. Keep turning and smacking the seam until it opens. Don't mistake your finger for a seam and all's good.

Best done before drinking the MaiTais.

picked one off a tree in ft myers-- opened it with a leatherman tool-= took me 4 hours....yes i wanted that thing-- got the milk out by holing the eyes, then whakked it with a hammer. i was tired of picking it open--
