Sushi Doesn't Mean Raw Fish

sushi is vinegar rice, usually topped with other ingredients, such as fish.Sliced raw fish alone is called sashihi, as distinct from sushi. Combined with hand-formed clumps of rice, it is called nigirizushi . Sushi served rolled inside or around nori (dried and pressed layer sheets ofseaweed or algae) is makizushi . Toppings stuffed into a small pouch of fried tofu is inarizushi. Toppings served scattered over a bowl of sushi rice is called chirashi-zushi.

Supplies needed

wide wooden bowl (sushi oki if you want to go tradisional )
a sharp kinfe
wooden spoon
hand fan (a book or magizine will work)
plastic wrap (to wrap rolling mat in for easy clean up)
rolling mat (makisu) cost $2-$3

Ingredients needed.

superfine sugar
salt
rice vinegar
soy sauce (for flavor if you like)
wasabi (for seasoning)
dried kelp
dried seaweed
short grain rice

Recipe makes 4 large rolls

1 1/2 cups short grain rice
2 cups water
1 1 inch stripe of dried kelp

soak for 10 minutes
bring to a boil
remove kelp
cover and simmer over low heat for 13 minutes
*IMPORTANT* DO NOT LIFT LID DURING THIS PROCESS
remove from heat leaving lid on to keep in the steam and let stand for 10 minutes

Mix vinegar while rice cools
*PER CUP OF RICE*
1 TBSP rice vinegar
1 TBSP superfine sugar
1 pinch (slightly less than 1 tsp) of salt

Combine in small sauce pan and stir till mixture is dissolved.

cool rice with a hand fan (if you don't have a fan improvise)

Sprinkle vinegar mixture over rice

with a wooden spoon cut the rice ( fold with horizontal slicing
motion with a little flip a the end) till at room temperature.

How to roll

place rice mix on dried seaweed sheet spread evenly
put anything you like on making each bite even
you can roll it with the seaweed on the outside or inside do this by hand
place on rolling mat roll mat over it and squize softly
cut into 1 inch long pieces.
enjoy

Much cheaper making yourself than these prices.
Sushi Menu

However there are real dangers in making sushi a staple part of you diet as you can read here.

Much cheaper. i don't use raw fish in my rolls. You can use veggies for rolls as a side dish. I use cooked shrimp, crab, fish, eel, squid, hotdogs, chicken, what ever. The rice, seaweed, vinegar, kelp are all really good for you. you get carbs, protein, vitamins, amino acids, all kinds of things that are health. better than a sandwich any day. Try using the rice and seaweed with sandwich stuff(turkey, ham, lettuce, tomato, mayo, spicy mustard, what ever you want. create your own sushi rolls with what ever you want inside. you don't have to use raw fish.

In Hawaii it was common at neighborhood parties to prepare the rice, seaweed sheets and a selection of items to build your own "Hawaiian burritos."

some of the ingredients included

Mayo
Processed crab meat
cucumber
sprouts
avocado
spam - Hey it's Hawaii alrready
Ham
Chunk tuna

But just about anything goes.

For the rice recipe you can also include the Japanese seeds - I forget the name but they are black and look like sesame.

For anyone in Brisbane, LR sushi is the spot, by far THE best sushi I have ever had and I have and I have eaten a lot of sushi in a lot of very expensive and supposedly very good restaurants.
Brisbane’s best sushi rolls | ourbrisbane.com

Super fresh
Cheap, $2ish for the freshest raw tuna, raw salmon, they have soft shell crab sushi, you name it they probably have it.

Lunchtime crowd can easily be a 20 minute wait for takeaway

If I'm a good boy, the boss usually brings me home a pile for dinner on Fridays. Today I must have been bad.

Alton, thanks for the great explanation of the differences. I only knew about the difference between sushi and sashimi.

My question is "Who cares?" I just eat what my wife tells me to eat.

from the Daily Mail article
"If you eat a meal of salmon sushi more than twice a year, you will increase your risk of cancer," says Professor David Carpenter, an environmental health scientist at the University at Albany, New York."

I would be long dead if this was so.
