Stainless steel BBQ smoker.

I was going to do some creative work on a s/s beer keg I have but then found this and for $150 including delivery, couldn't be bothered.

Anyone had experience using something like it?

Re: Stainless steel BBQ smoker.

I have a lot of experience with smokers including building a few. That looks perfectly functional and the modular design is rather interesting both for storage and adjusting cook chamber size.

Only two concerns I would have are around the vents and your ability to control airflow. The vents on top have no shutters. Other concern is being aluminum maintaining even cook temps might be challenging.

Re: Stainless steel BBQ smoker.

Looks good. The construction from the ad details is SS, not aluminum.

Have a propane version (for land use) w/a pan for water and to catch drippings just under the smoker racks. In this unit it looks like the bottom is a catch pan for the drippings around the burner. It definitely has a lot of rack space to do large amounts at once.

When on the boat, I carry wood chips and smoke oily type fish on our Magma propane grill. Makes great apps and easy to do. Usually just use foil to hold my soaked wood chips and eventually will make a reusable SS tray to hold the chips.

What are you planning to smoke in your new cooker??

Re: Stainless steel BBQ smoker.

I have something similar but it only has two pieces. There is a vent on the lid and the door at the bottom can be closed to dampen the fire. The legs have vents to let in air but they cannot be closed but they do not need to be either.

The cooker has a big pan at the bottom that is supposed to be used to contain drippings from the meat as well as hold water to steam the meat. I don't use it for steam. There is a stand that will hold the upper pieces and the stand has a propane burner. One can use the stand with a big pot that came with the cooker to boil water, fry a turkey, etc. I have only used the propane stand a few times.

The vast majority of times I just big up sticks from the ground to start and feed the fire and thus smoke the meat. I add a few larger pieces of wood, still pretty small, about the size of the small paper back book, but most of the wood is small stuff falling from the trees.

While my BBQ has two levels/pieces, but I only use the top level. The bottom level would cook the food to quick. I think they only way the bottom level would work to smoke meat correctly would be to have an attachable fire box that would feed smoke to the BBQ. Don't have that but also do not really need it either.

The BBQ is small and round, maybe 18-20 inches in diameter and I can cook 1.5 whole pork loins at one time. That is a bunch of meat. I cut the the loin into pieces 3-4 inches thick to speed up cooking time which also allows me to maximize the amount of meat being smoked at one time.

The BBQ in the photo looks to be better constructed than mine. The only problems I have had with mine is that the thermometer in the lid is busted because I let the fire get to hot when making some coals. I just put an instant read thermometer in the top vent to see the temp if I need too. I can pretty much tell how how the fire/smoke is from the look of the exhaust through the vent so but I to check to make sure the temp is right. The stainless steel has gotten a patina over time. Not a big deal but it is not nice and shiny if that matters.

The BBQ is not on a boat nor near a body of water, much less sea water, but I let it sit outside in the rain most of the time, and that has not been a problem.

I have thought about getting/building a grill with a smoke box but I can't justify spending the time/money since what I have works so well.

Later,
Dan

Yea that will work. I have been smoking meet for years on different smokers. I do have my favorite but I find that once you get a particular smoker dialed in they all work. Heck my buddy made one out of a old file cabinet. That one looks pretty good to me. Maybe a little bit top heavy but you could add some ballast if that is the case. Low and Slow.

And we throw it away in several years and buy another.
The same as we do with our powdercoated steel framed outdoor furniture onboard.

I’d bet money it’s 18-8, which almost all kitchen stuff is.
For those wondering 18-8 is 304, even 316 is of course 300 series.

Re: Stainless steel BBQ smoker.

Looks top heavy. What is your plan when it is fired up, hot, smoking away and a swell kicks up? Not something you want tipping over.

Obviously not to be used in a seaway whilst underway.

Don't know how much you plan to smoke at one time, but try the BBQ if its only small amounts of meat. I like using the Magma as a dual purpose item and it secured on the rail. Only extra thing you need to carry is your favorite wood chips.
