I probably lean a little towards eat out of the pressure cooker when I'm solo, although do try to act a little more civilized occasionally, use a real plate and sit at a table instead of standing over the
stove.
Either way, I do like one pot dishes although most end up as two. Fried rice is a quite and easy and you can use almost any sort of vegetable still living in the
galley.
Spaghetti is another quick and easy. Use a good brand of sauce in a bottle but start off sauteing fresh garlic and onions in a pan then add the bottled sauce.
Cheese and crackers with a couple of raw veggies like sliced carrots and a glass of red wine is good for quick eats if you drop
anchor late and don't want to cook.
Mexican is also good, especially if you have a ripe avocado and tomato.
