Shelf-Stable Cheese

Interesting company. They have a very wide variety of shelf-stable cheeses. I saw some at World Market and tried two types. They were both good. They seem to have dozens a varieties, so I am curious to try more. They will also sell in bulk at reduced rates (enter their site via the "wholesale" link). Seems like a good way to provision cheese. Looks like wholesale it will come to a bit under $7 a pound (based on the bars).

I think expiration date is 6 months. These are processed cheeses of course. I ate them on crackers and they were tasty. Do not compare to a really good cheese of course, but would be great for cooking or when the good stuff is not available.

One way to judge cheese, salamis, etc. is whether they are refrigerated at the point of sale. Choices range from really great artisanal cheeses to supermarket Velveeta, which is use-by dated. Kraft cheese spreads in jars, especially the Old English Cheddar, are great to keep on hand for impromptu cocktail spreads. When you visit a gourmet deli and cheeses and sausages are hanging from the rafters, chat up the proprietor and ask about shelf lives.

real cheese is made in a cool not cold place.t he milk has to rot, after all--is not necessary to keep in fridge if buying REAL cheese. just keep it cool and in the non plastic packaging REAL cheese comes in when made. is a cheese cloth.
and what janet said...lol
milk cannot rot in a fridge. cheese does not cure in a fridge. cold kills the organism that creates the cheese. enjoy!!!!!

The only place it mentions it on their web site is in the title to the page (which you can see in the link above). World Market sells them unrefrigerated which, as pointed out above, is a pretty good indication.
