The USDA has a "Complete Guide to Home Canning, 2009 Revision" that is really good. Adobe Reader 10 or above needed.

Fagor has even sent me a manual, but it is not showing my specific model. Lid is the same, but the knob is different than the newer versions.

Ask fagor if they made any models that didn't go up to 15lbs. I highly doubt that they did. Although they have some models that have a selection of pressures it's obvious which is the high
