Re: Perfect hard boiled eggs

seeing as how I am still landlocked, on an acreage, he have a small flock of chickens for eggs (around 70)

I would imagine that depending on where you are in the world eggs could be fresh unwashed or washed or old washed or unwashed

washed eggs will be ready to boil sooner than unwashed eggs due to the removal of the bloom
old vs new eggs old boil better, we keep unwashed on the counter for two weeks before we boil

dehydration is what makes em easier to boil, though running through warm water when you peel seems the most foolproof

Cover single layer of eggs with tap water, bring to a boil for 2 minutes, turn off heat, cover for 12, drain, cool tap water. Perfect eggs.

This is the way I've done mine for years, except sometimes I stretch out the sit time in the pot if I'm busy doing something else. Doesn't matter, still makes great boiled eggs.

Re: Perfect hard boiled eggs

We like them steamed - half inch of water plus tsp of vinegar to prevent breaking. Boil water then eggs in for 7 minutes for firm whites and runny yolks. Another minute if you like yokes firm. Plunge in cold tap water. Remove, crack, eat.

Re: Perfect hard boiled eggs

First world problem.

Prick the end. Put in cold water, then bring to boil. 10 minute timer. Then rinse in cold water.

Perfect. Increase or decrease time for runny or hard and to adjust for slow or fast heat sources.

Powdered eggs have a storage life of 5 to 10 years when stored without oxygen in a cool storage environment, according to the 'pedia. I'd also be interested to know how people find them w.r.t. palatability.

To everybody who said 15 mins to cook hard boiled eggs....
you should be ashamed of yourselves...an unbelievable waste of energy, especially as you are all on boats where savings and efficiency are paramount.

Re: Perfect hard boiled eggs

Best method I have ever seen is steam the eggs for 12 minutes. Perfect every time. Google thermoworks hard boiled eggs. More information than you could ever want about hard boiled eggs!

Sigh

We are "not" all on boats where savings and efficiency are paramount...
Some of us have huge generators and solar to burn...

.........and furthermore, I dont feel in the slightest bit ashamed.

But I still would not HB an egg for 15 mins.. I put in instant pot for 5 mins, NPR for 5 mins and then in cold water for 5 mins... 1KW heater..

Re: Perfect hard boiled eggs

Another vote for steamed.

The less time eggs spend exposed to air and heat, the less cholesterol is converted to oxy-cholesterol, which is what does you harm. Steamed or boiled eggs are tremendously good for you, but the less oxy-cholesterol the better. Fresher is better too, as eggs naturally take in oxygen over time.

If you wonder how old your eggs are, put them in a bowl of water. If they lay on the bottom they are fresh. If they stand up on the bottom they have formed an air pocket on the end. If they float they have a lot of air in them. Some cooks prefer them slightly aged as they peel easier.

Thankyou weavis.
As a plunderer of the planet earths resources, for which you should be truely ashamed, I am surprised that you ended up mistakenly owning such an energy efficient device as the Instant Pot.
