Naan Bread
Does anyone have a recipe for Naan bread they want to share. Looking it up on the Internet, I can find recipes that bake it in the oven and some that cook it in a skillet on the stove. I also had someone suggest using a pie tin turned upside down over the burner. I would appreciate any suggestions.

The naan you get in an Indian restaurant is done in a special clay oven.

For skillet breads I like to use my big cast aluminum griddle that covers two burners. Speeds up production if there are more than two people on board.

just 1 question. is naan pronounced 'nan' like in pan pan ? or is it 'non' like in pon pon?

I just wanted to thank everyone for your posts. I haven't been able to try any of the recipes yet because I haven't been able to find any yeast yet. I went to my third store today.

If you are using yeast then you will want 1 sachet ( or teaspoon ) per 2 cups flour

In the Punjab yeast is not used... or baking powder... its yoghurt..
They don't have yeast or baking powder in the village's... their food also tastes nothing like anything you'll buy in a restaurant in the West.. its loads better..

Sanjeev Kapoor is kind of like Rachael Ray ;-) I didn't check every one of the naan recipes here but I think at least the garlic naan uses baking soda. Yoghurt makes the naan soft and fluffy.

Yoghurt would work just fine with your original recipe boatman. Add it instead of the milk. That will make the dough a little dry so you toss in a slurp of water. Something near a half cup would do it.

Only problem is Western yoghurt is crap... barely alive..
out there its fresh every day... just wander down the road in the morning and buy a half kilo 'baggie' every morning along with your Hulva Puri breakfast...
