Boiling water to make hot drinks is one of the main galley functions on a cruising boat, especially in cold climates. Figuring out the best way to do it -- and drilling into the engineering questions which come up in the process -- is both fun and useful for those of us who like to know how things work.

Induction is very cool because it gets more of the heat into the pan and less of it into the air. The issue is not conversion of electrical power to heat (which is an easy conversion and always 100% efficient, unless something moves or emits light), but avoiding heat from being wasted in the cabin air.
It’s definitely the way I will be cooking on my next boat. With a reasonable electrical system, induction cooktop, and an electric convection oven, there’s hardly any need to keep propane on board anymore on any but the smallest and simplest cruising boats.

The only real drawback is that electric cooktops are quite as nice to cook on for the Grand Chef de Cuisine on board, but compared to the danger and hassle of gas on board, I think can be sacrificed. YMMV.

You might want to tell the Vendee Globe guys about this because they all use gimbaled Jetboils.

It is definitely not good practice to use such things inside boats.

Agreed. There have been several cases of mountaineers dying from using these (not Jetboil necessarily, but others) in side tents to keep warm. Yes a boat is bigger, but still the risk is there.

Besides, keeping those canisters would be a pain.

That said, maybe there is some way to use the Jetboil "bottle" on a propane stove. I think it's the fins of the Jetboil bottle that make it so efficient, not the gas used.

There is risk but I survived a double handed transatlantic race using one on a trimaran as well numerous coastal races. They are quite popular among the pro solo sailor crowd. I wouldn't hesitate to use one again. Common sense works.

OK I read that as exactly what it says don't use portable gas appliances with integral( built in/ large tanks) instead of the disposable cylinders that they are designed to be used with.
