Mahi Mahi Fish Recipe (Do not read if on diet)

This is a basic recipe, it is the way I cook so you will have to do everything by portion and taste.

I made this one night when i had friends over and they were all up for an experiment. This was enough for 4 people.

posted in order of the way I cooked it.
One strip of fried bacon, use the same pan and do not drain bacon fat then cut bacon in to small pieces. clean one jalapeno and chop in to very small pieces and cook in bacon fat and butter 1 TBLS butter, I used one package of mexican cheese, (white and orange cheese) then some chipolata powder to taste 2 table spoons of chunky salsa , I used a mild chunky salsa. cook over a low heat just enough so you melt the cheese. KEEP STIRRING so you will not burn the cheese.

Put the mahi mahi on the grill over mesquite, when the tuna is done to your liking let it sit for a few minutes then pure some sauce over the tuna.

And enjoy.

mahi,mahi is dolphin, tuna is a whole different kettle of fish

good fishie recipe doesnt matter the kind...as long s is fresh. do ye mean chipotle??? dont know what chipotala is--- chipotle is roasted jalapeno pepper.

The mahi-mahi or common dolphinfish (Coryphaena hippurus) is a surface-dwelling ray-finned fish found in off-shore temperate, tropical and subtropical waters worldwide. It is one of only two members of the Coryphaenidae family, the other being the pompano dolphinfish. It is also known as the dolphin,which causes confusion with the more widely-known marine mammals called dolphins. Mahi-mahi means very strong in Hawaiian. In other languages the fish is known as lampuga, lampuka, rakingo, calitos, maverikos or dorado. (Source Wikipedia)

Calling it Mahi Mahi sounds better and does not make people think you are eating a marine mammal.

If I catch it I don't care what it is called. Caught a fish in the South Pacific once. As the others sat around trying to figure out what it was called I had it cleaned and cooked it. I called it yummy. Even with a picture reference guide I still am not sure about most of them unless it is one I am very familiar with. I only care if I am taking it back. But if I am eating it I just make sure it is not poisonous like a puffer, away from pollution and just eat it.

Recipe sounds good for any fish

get live shrimp/praawns
get good pozole seasonings
get a lot of garlic
add caldo de camarones seasoning/broth--makes it absolutely awesome.
boil water and seasonings and garlic in a saucepan or wtf pan for boiling
add shrimps when boiling
cook only until barely done. serve with or without rice.
consume at great speed as they wont be around llong.

I'll try this recipe, but will stick to tuna (or bluefish or striped bass). I find Mahi Mahi to be a little too sweet for my palate.

A very SIMPLE but fantastic method/recipe for any fish is to cut in cubes put some curry powder and cornflour into a plastic bag close top and shake to mix now heat up some oil till lightly smoking (the oil not you!!!).
Now put a handful of the cubed fish into the bag and give it a good shake.
Dust the cubes off of excess and pop them into deep or shallow fry till cooked through.
FANTASTIC with a cold beer and as simple as can be........
